There are dishes that are difficult to get right precisely because they consist of almost nothing. Pa amb oli is one such dish. Bread, tomato, olive oil, salt. On Mallorca, it is eaten for breakfast, as an appetizer, or in the evening with ham and cheese, and every time it stands or falls on the quality of those four ingredients.
What Pa amb oli actually is
The name simply means bread with oil in Mallorquín. The Catalan version from the mainland is called Pa amb tomàquet and is prepared a little differently. In Mallorca, a special tomato is traditionally used, the Tomàtiga de ramellet, which is hung on strings and stays fresh for months, losing water and gaining aroma in the process.
The ingredients
Bread: hearty farmhouse bread with a firm crumb, ideally a day old. The Mallorcan Pa moreno is unsalted, which tastes strange at first but works precisely because the salt is added on top later.
Tomato: fully ripe and aromatic. A watery greenhouse tomato will only make the bread soggy.
Olive oil: an extra virgin oil that you would even drink pure. There is no room to hide here.
Salt: coarse-grained. Flor de Sal is not a luxury here, but the difference between good and really good.
Step by step
Cut the bread into slices about one and a half centimeters thick. Thicker slices absorb too much, thinner ones get soggy.
Lightly toast the slices in the oven, in the toaster, or in a grill pan. They should become firm on the outside, but not dark.
Halve the tomato crosswise and rub the cut side over the bread until only the skin is left in your hand. Do not cut it, do not lay it in slices. The rubbing distributes the pulp and juice evenly and is the real trick.
Pour the olive oil generously over it, significantly more than you think. Finally, sprinkle the salt between your fingers.
The most common mistakes
Too little oil. The dish is called bread with oil for a reason.
Salting too early. Salt draws out water, and the bread becomes soft. The salt goes on right at the end.
Garlic as an obligation. On Mallorca, it is optional. If you want it, rub a halved clove over the warm bread before the tomato.
Leaving it to sit for too long. Pa amb oli is eaten immediately, not prepared in advance.
How it continues on the island
As a complete meal, toppings and sides are added: air-dried ham, Manchego or island cheese, capers, and pickled olives. Serve with a glass of wine from Mallorca, preferably a young red, slightly chilled.
If you want to have the basics at home, you actually only need two things from the island: a good olive oil and the salt. You can find everything else at your local supermarket.
